Any stew is vastly enhanced by mincing a few chipotles and adding them and
some of the adobo. Back when I ate meat I would put a cheap cut of stewing
beef with chipotle en adobo in a crock pot and cook it to shreds along with
the basic Mexican seasonings such as cumin, garlic, basil, etc. Whatever you
use to make tacos. Makes the most divine burritos or tacos you'll ever hope
to sink a fang into.
I'm sure that it would also be delicious in veggie stews.
By the way, that's a great idea about adding vinegar when you refrigerate
leftover chipotles. I didn't and mine would turn moldy very quickly. Now I
know how to keep them "freah". Thanks for the tip.
