Ok, this gives me the excuse to plug my absolute favorite spice source and
the place where I get 90% of the spices I cook with.

First the disclaimer.  I get absolutely nothing in the way of compensation
from this place.

I have been purchasing spices from them for over 30 years, and my family
longer than that.  They are a multi-generational family enterprise, with
the spice selecting, sourcing and blending skills apprenticed from one
generation to the next.

The people I started purchasing from are Bill and Ruth Penzey, and they now
operate a small walk-instore in Wauwatosa, WI.  They divided the business
between two parts of the family as they are semi-retired. 

One part has the Spice House in  the "Old Downtown" part of Milwaukee and
does a small mail order business, but mostly walk-in in that trendy area.
They have an excellent jerk (dry, you mix) marinade which I buy when I go
through Milwaukee.  I also have purchased the best pasillas I ever had at
that store.  I do not have their address, but the phone number should be
available through (Milwaukee) information.

Each store has some family recipes that are common to all and some that
have been reserved exclusively for one store as well as some they developed
themselves.

I get my mail order stuff from the store in Waukesha, which does the bulk
of the mail order business.  The address will be below.  They pack mostly
bulk in high quality zip lock type bags, but gift packaging is available.
Their catalog contains a lot of tips on using the spices and storing them.
A few recipes, too.  Often some history on the spice.

Most prices are very competetive witha anything in any store, but on the
few that aren't, the quality is well worth it.  Their quality is the
highest available anywhere.

A reasonable assortment of chiles, including chipotles.  Try their many
curry blends.  Some recipes have been given to them by people of different
ethnicities just so these people could have a source for seasonings
available in their respective foreign countries, but not in the US.
