[CH] Boervors a recipe

Boervors (Farmers sausage)

10 lb beef
5 lb pork or mutton fat (Sheep tail).
2 tbs coriander seed ground
1/2 grated nutmeg
4 tbs salt
2 tbs ground cloves
2 tbs allspice
2 tbs pepper
2 tbs chile powder or to taste *

* Added to the original recipe.

Mince beef and cut fat into small cubes.
Mix all ingredients well.
Cover for one hour.
Fill large size skins (casings) and tie ends.
