We buy large quantities of habanero peppers to make our sauces, so we
have found the best way to preserve them, is to freeze them. We put the
whole 5lb. boxes in our freezers. The color stays great and you don't
lose any heat. Takes just a few minutes to thaw them out.
By the way, I'm soooo jealous of all of you attending the Fiery Foods
show. We are moving our cafe and it is season in Florida right now so
we are hopping. I know you'll have a great time. Our products will be
in the show, and I would love to be there. A good friend of ours, John,
from TPA Peppers will have our stuff there. Have too much fun!
