They are good chopped up in eggs, including omelettes.  I saw them for sale
a LOT in Bolivia last year, but never did see any dishes with them (there
called Locoto).  Except  chopped up for putting on a saltin~a (damn, I
don't have a Spanish n), which is a handful of chicken/potato spicy stew
encased in a bread shell.  Kind of like a taco, only very different.
