Just a note or two concerning pumpkin pies....first off, Monk Rael do *luv*
punkin pie...but, I've found Mr. Sweet Tater is a wonderfullishous
substitute and most importantly, available for a longer period o' time.
One typically has to make no changes to a recipe other than swappin' tater
for squash...also, P. Prudhomme has two outstanding sweet potato pie
recipes - one a fairly basic (fattening) sweet tater pecan pie, the other a
sweet tater praline pecan pie - and both have been made by yers truly with
punkin.  Deeeelish, baby...
