Comments on homemade hot sauces:  
We make hot sauces (Tobasco types) by blending
1/2 vinegar, 1/2 hot peppers.  Pour the pureed 
pepper/vinegar mix into a saucepan and bring to 
a boil for 5 minutes.  Blend again and pour into
hot sterilized jars.  Process in a pressure
canner for the recommended time in your canner
book.  Let stand for 2 weeks.  This can be transfered 
to bottles after opening and kept in the refrigerator.
We make about 3 quarts of this sauce.  Some from cayenne,
green jalapeno and even a batch of straight 
habanero!  We have even made it using peppers we 
frozen in the deep freeze.  Great stuff!
