I always think of pungent as being strong flavored usually in an acidic
sort of way, but hot as being pure heat in a burning sort of way. 

Someone mentioned biting and sharp, and I'd go along with this, as it is
an instant and sharp assault on the senses, whereas heat is a building
process in most cases.  

While comparing the hottest sauces at a recent competition, one of them 
had a good heat and a bit of a clove taste, so I tried some more, and 
then some more.  I should have waited.  After a minute or two, the heat,
which was pretty good to begin with, started to build, and I started to 
sweat and turn a pretty remarkable shade of red I'm told.  A little 
yogourt helped, but time helped more.  I wouldn't have called that sauce 
pungent, but it certainly was hot.

I wish I remembered the name, as it had a pretty good taste for an 
extract based sauce, but all I remember is that I think it started with 
the letter T as in Tornado.  I think Tornado might have been in the name.
