[CH] Another Pork tenderloin!

Well, Jonathan, sorry to be so long getting back, hadda figure another
one out, seeing as the poor old brain could not remember the first one!
So, mon, here goes: BTW this was so good. we killed the whole thing,
just the two of us!
!    one lb pork tenderloin, left whole, trimmed of fat, and silverskin
4 tbls ginger wine...or white wine, good knob of ginger, chopped fine, &
sugar
4 tbls ketjap manis(Indonesian soy sauce, available at specialty Asian
markets NO SUBSTITUTE)
6    cloves of garlic, chopped fine
Trim tenderloin, and place in a non reactive pan(stainless steel best),
add the wine, soy sauce and the garlic and let this marinate turning
frequently for at least 12 hours
Before you take this to the oven, add 1/4 to 1/2 tsp of Jims smoked hab
powder, OR Calvins, whichever you have...if neither, get in touch with
these guys first!!!
Place this pan in the oven, covered at 400F for about an hour, then
uncover and finish for about 15 - 20 minutes...remove from oven and let
rest, before slicing...serve with the remaining sauce from the pan, like
wow...that is why I left the explanation mark instead of 1 !!! I served
this with a whole cauliflower, steamed, and sprinkled with
turmeric(lots) and then dotted with butter, also did sweet potato and
onion and jalapeno, simple peasant food...take one sweet potato, good
size, mic it and peel it and chop it, take on good sized onion, chopped
fine(medium)one jalapeno, chopped fine....simmer onion and pepper in
olive oil and marg until it is limp, add sweet potato, cloves, allspice,
salt pepper, and cook! Great stuff, have fun, and hope you have the time
