I don't believe it matters what it is made from- what you are getting is
the capsaicin (thus extract is properly named Oleo Resin Capsaicin-
'ORC' in the trade), not some sort of 'hab extract'.  'Paprika' is the
chile I see used most often in ORC.  They are a large, easily grown
chile that is already grown in great quantities.  If I were to make my
own ORC, I would likely use New Mexicans for that reason.  ORC from hab
will taste the same as ORC from Cayenne- nasty, IMHO.  This is why those
of us on the list can identify when someone says 'extract taste' what
they mean.  The ORC is most often blended with veggie oil to a specific
Scoville rating.  I use 1 million ORC in my 'extract sauce'.  

Yes, I would suspect that a large amount comes/came from the folks at
Avery Island, although there are also a few commercial food produce
companies that supply this as well.
