For your own well being please ignore the above.The unit "pH" is a well
defined measurement of the acidity or basicity of a solution. (Negative
log. hydrogen ion concentration if you really want to know.) Do not rely on
hearsay and guesswork if you are doing any food canning or preserving. Test
papers for measuring pH are cheap and easy to use.

Chipotle is not a type of pepper. It is smoked jalapeno. Now "discovered"
by the restaurant business in the US.
