Hi all,

I recently made a "home made" smoker by converting my oven style gas bbq.

This will not work for indirect smoking (where little heat reaches the food) but for quick smoking of foods when you don't mind them getting heated as well it works great.

My bbq runs off a standard gas bottle, has a full grilling rack over the gas jets and a half rack above that for warming breads and things.  I covered the bottom rack completely with heavy aluminum foil and covered the top rack in the same way.

Sawdust was then sprinkled on the lower rack and the food to be smoked was placed on the half rack above.

I turned the gas on medium and a few minutes later the sawdust began to smoke.  Do not turn the grill on high or you may ignite the sawdust.  It should smoke, not burst into flame.  It would also pay to use the thickest aluminum foil you can find for the same reason.

I am now looking for good chile based smoking recipes.
