OK... should have read this before I replied..
I know technically Bells are chiles.. but I consider them to be a different
in cooking than chiles.
I couldn't see making fajitas without a bunch of red bells fired up with
the onions..

Favorite overall/most versatile: all of them...
Favorite salsa chile: serrano or habaneros
Favorite sauce chile: New Mexico varrs
Favorite paste chile: don't use chiles in paste
Favorite on pizza: the old standard chile carbide
Favorite polish-off-a-whole-jar: chipotles
Favorite sweet chile: sweet paprika
Favorite pure chile powder: Dixon medium hot (New Mex varr) or chimayo
Favorite chile to add to BBQ sauce: chipotle
Favorite quick hot hit chile: chiltepin/ piquin
Favorite Kick it up a notch chile: Red Sav Habs
