Oh yah.  Making hot sausages isn't all that different from making sweet
ones, just put some peppers in. <g>

I make my own sausages, pastrami, corned beef, etc.  A good place to start
is to go over to www.dejanews.com and do a search in the newsgroup
rec.food.preserving; look for posts by Paul Hinrichs: he's very
knowledgeable about meat preserving, and always seems willing to share his
expertise.
