I think they use Lan Chi chile paste. You can get it at any chinese grocery store. They make a paste with and without garlic. I use the garlic one at home. Also if you want something even hotter (of course you do!!) there is something called Chef Chow's Szechuan Hot Bean Paste. Ooooo...that is hot stuff. Hope this helps. RisaG
