      Title: Chilli-Lime Dressing (Bon Apetit)
 Categories: Epicurious, Dressing, Citrus, Chiles
      Yield: 1 /2 cup
 
    1/4 c  Fresh lime juice
      2 tb Soy sauce
      1 tb Chilli oil*
      1 tb (packed) golden brown sugar
      1 ts Minced garlic
 
  *Available at Asian markets and in the Asian foods section of some
   supermarkets.
  
  Whisk lime juice, soy sauce, chili oil, sugar and garlic in medium
  bowl to blend. Season dressing to taste with pepper. (Can be made 6
  hours ahead. Cover and refrigerate.)
  
  Yield: Makes 1/2 cup

      Title: Cold Poached Chicken With Chinese Garlic Sauce
 Categories: Epicurious, Poultry, Chilli
      Yield: 2 servings
 
MMMMM------------------------FOR CHICKEN-----------------------------
      2 c  Water
      4    1/4-inch-thick slices fresh
           Gingerroot
    1/4 c  Scotch whisky
      1    Whole skinless boneless
           Chicken breast (about 3/4
           Pound)

MMMMM--------------------CHINESE GARLIC SAUCE-------------------------
      1 tb Soy sauce
      2 cl Garlic, minced
  1 1/2 ts Rice vinegar (not seasoned)
  1 1/4 ts Sugar
      1 ts Asian chilli oil, or
      1 ts Asian sesame oil plus
           Tabasco to taste

MMMMM--------------------------GARNISH-------------------------------
      3 tb Chopped coriander sprigs
 
  Accompaniment if desired: sesame orzo with charred scallions
  
  Poach chicken: In a 1 1/2-quart saucepan bring water to a boil with
  gingerroot, Scotch, and salt to taste. Add chicken and simmer,
  covered, 12 minutes, or until just cooked through. Transfer chicken
  with tongs to a bowl and chill, covered, 20 minutes.
  
  Make sauce while chicken is cooling: In a bowl stir together sauce
  ingredients until sugar is dissolved.
  
  Halve chicken and cut across grain into thin slices. Spoon sauce
over
  chicken and sprinkle with coriander.
  
  Serves 2.
