I personally like Emeril's Essence. I have made a slight variation of it for myself. I take the creole essence and add about a 1/2 portion of the southwestern essence, take out a little salt, add some seasoning salt and a bit of dry mustard. What a hoot! everyone I cook for loves it! The Essence of Dave! ( I hope that's a good thing!)
