That leads us to my question, of course ;^)  One of the plants, an Aji
Yellow, has developed leaf curl (they're curling _up_ if that makes any
difference). I don't see any signs of disease or fungi. I've tried misting
the plant several times without any effect. Any ideas what might be up here?

Could be a magnesium deficiency
try spraying with alight solution of Epsom salts
