[CH] Chicken for 2!

If we could get away from cow(or steer, and there MUST be a
difference)doo doo for a minute, and its place in the
garden...personally I prefer fish fertilizer! Here is a recipe for a
fabulous HOT chicken dish...
1	whole chicken breast,boneless and skinned
1/4 cup sour cream or mayonaise with a dash of lemon juice
3	tbls hot salsa, your choice as to brand
1/2 cup dry breadcrumbs
1/4 cup freshly grated parmesan cheese(or romano)
1	good dash of hot red pepper flakes
1	tsp finely chopped fresh rosemary

Cut chicken breast in two...lightly pound each half, and sprinkle with
salt and freshly ground black pepper...mix together the sour cream or
mayo and lemon juice, and the salsa, in a shallow dish..mix together the
bread crumbs, the cheese, red pepper flakes, rosemary and a dash of salt
& pepper....dip chicken pieces in sour cream mixture,then in the bread
crumb mixture and coat well...place on a baking sheet and bake for about
10-15 minutes at 450F,then another five at 400, remove when browned and
chicken is cooked...serve with rice,more hot salsa and veggie of your
choice...great for one or two, eh Alda??Eh Jim(shameless) or any others
