Dan,

Your description fits that of the Habanero/Scotch Bonnet plant,  very large
leaves with more of a texture.  As far as when to pick, chiles can be
picked green as are most of the Jalapeņos and Serranos you see in the
produce section at the supermarket.  If you let them ripen to the mature
color on the plant the flavor will fully develop.
