[CH] Pepper Mash

Has anyone here ever tried their hand at aged pepper mash?  I tried it but used way too much salt!  I suppose I'm concerned with applying enough salt to the mash to prevent spoilage yet keep the pucker factor down.  I would appreciate any tips or recipes that you can provide.  Thanks in advance!
