URGENT !!

Can anyone out there remember the beatiful Jamaican Cous-Cous curry recipe
as I wish to check that I have it right ?

My way goes.

Ingredients
===========

1 clove of fresh garlic (dried lacks a little aroma)
3 chopped lemon grass strands
1 tablespoon lime juice or squeeze a fresh one.
1 tsp ginger
oil of choice
3 red or green chillies - to choice (this is the conservative measure)
3 julienned spring onions
1 cup of dry cous-cous
0.5 pints water
handful of green or red frozen veg for contrast
soya/coconut milk to taste

Fry dry herbs in a little oil to spread the flavours.  Crush garlic into
oil and fry with onion for 30 secs.  Add chopped chillies- beware the
fumes.  After ~15 secs pour in the cous-cous, water, lime juice and a
little milk, IN THIS ORDER [avoids the  Water/Oil flashback.  Cover and
leave to cook for ~15 mins.  Serve with suitable accompaniments
[chilli/lime chutney goes well].  Add rice and this dish serves four
easily, alone it serves two well !  Personally, I am not a coconut milk fan
and so stick to the soya but it's your choice.
