In a completely unscientific method, I dried some limes last year using a dehydrator. I just sliced the limes crosswise very thin and dried them on the rack. Besides keeping their flavor, they also made fine ornaments for Xmas packages. (If I weren't overweight and bearded you'd swear I was Martha Stewart!) David Cook
