[CH] Easy citrus zest

Here is my secret process for making lots of  citrus zest with out
grated knuckles...........

I simply use a vegetable peeler to peel the fruit - takes off just the
colored (and flavored) layer without getting any of the bitter  white
stuff.
I cut the peeling into 1 inch pieces let them dry for about   30
minutes  and   run them through my spice grinder.   These things are
really cheap nowdays, so I have one  for coffee,  one for herbs and
spices and one for  stuff  like this.  However  if you only have one and
want to  make sure flavors are not transmitted   do this------  Put  2
tablespoons of baking soda and 3 saltine crackers (or a slice of
slightly stale bread) into the grinder and whirl it for 30 seconds or
so.  Voila!   no odor, no taste.
