Again, I never measure but here goes.

Mike's New Orleans Style Smothered Pork Chops w/rice and fresh 'sparagus

6 pork loin chops
1 small onion (sliced)
3 cloves garlic (chopped)
1 rib celery (sliced on the bias)
1/4 green bell pepper (sliced into strips) sorry green but at least it
ain't liver
1/4 red bell pepper
4 roma tomatoes (i like 'em, just not store bought) mine were frozen whole
after peeling
1 cup chicken stock, home made (maybe more)
flour
2 tbls mike's seasoning (paprika, onion powder, garlic powder, red white
and black pepper, + a little oregano)
2 tbls olive oil
2 green onions green and white chopped
1/4 cup fresh Italian parsley chopped

ok here goes

heat big saute pan
season pork chops with lawrey's seasoned salt
dredge in flour
add olive oil to pan
brown chops and remove
in same pan add:
onion
celery
bell peppers
green onions
saute till onions are translucent
add garlic, Mike's seasoning, and still frozen tomatoes
add 2-3 tbls flour and stir
add chicken stock and stir some more
cook over low heat for 15 minutes
then add chops and chopped parsley (some wooshteshire sauce would be good too)
adjust for salt
cook untill yummy
the tomatoes disintegrate into the sauce, it cooks down.
Add Uncle Jim's Wonderful Habanero Powder

I served this with Thai Jasmine Rice with the sauce over it and fesh
asparagus that I blanched in salted water then tossed in hot butter (the
real stuff).
