[CH] hot sauce question - bacon

I am about to make a batch of home-made hot sauce and was wondering the 
consequences of using cooked bacon.  Will the vinegar make this a longer 
refrigerator item (month)?  Will I have to use it all in a week? (usually not 
a problem)
Any info/experiences would be greatly appreciated - substitutes? (bacon bits, 
etc.)
