Tomasita's in Santa Fe is really great. You should book ahead as it's
really popular and you can wait literally hours for a table some nights.
It's recognizable by an old train carriage.
    It's not hot, but there's a fantastic Italian  place not far off the
mall called the Palace (? can't quite remember the name). Food was
wonderful.
    Cheaper is the Blue Corn Cafe. They're more of a family place, but
they do a mean vegetable fajita.

Can't help with Albuquerque or Taos, but hopefully this is a start. Do
you need someone to carry your suitcases?
