Here's something Mary and I do with lentils and happened to write down.
This can very fairly quick if you have help chopping!

Here in SoCal Ralph's carries a canned Lentil Chili in the health food
section--Health Valley 99% Fat Free Vegetarian Chili, Mild Lentil.  It's
good, but very mild, so the spices here overwhelm that in the can.  Saves
time, but you can make your own lentils.  Also looks like we ran out of
fresh tomatoes.  I use low fat ground turkey in place of the ground soy
quite often.  Brown it first.

Use whatever fresh chiles you have on hand.

Star Trek Chili

2 tsp olive oil
1/2 -1 lb mushrooms, sliced
1 pkg (12 oz) Yves Veggie ground round
1 large onion, chopped
5 cloves garlic, sliced
2 Roma tomatoes, chopped
1 15 oz can diced tomatoes (ran out of Romas!)
1 15 oz can Health Valley Lentil Chili (or 2 c cooked lentils)
3-5 jalapeños, cleaned, diced
3-5 Anaheims, Anchos, etc, cleaned, diced
1 habanero, cleaned, diced, optional
1 manzano, cleaned, diced, optional
1 cup decent dry white wine (I use a lot of Fontana Pinot Grigio for cooking
and drink the rest)
1 1/2 tsp ground ginger (fresh is better)
2 tsp turmeric
1 1/2 tsp ground cumin
1 tsp (to taste) Naturally Cajun seasoning (cayenne w/spices) or Chile
powder (Calvin's would be nice)
2 tsp Curry powder
salt and fresh ground pepper to taste

Heat oil in large sauté pan or wok, add garlic and chiles, then onion, salt
and pepper to taste.  Cook until onion clears.  Add mushrooms, wine,
tomatoes, heat while stirring, start to add spices.  Cover and simmer.
While simmering open ground soy and crumble up (or brown ground turkey).
Add soy.  Add a little more wine if necessary.  Adjust spices.

Grate some cheese (1/2 Pecorino Romano and 1/2 Nonfat Jalapeño Jack is
good), serve over toasted buns!
