I've done this with Aneheims that were ripened to a nice red color.  Roasted 
them in a toaster oven (Hold down the "Toast" lever till the smoke detector 
goes off...), tossed them in a paper bag for 10 minutes and peel.  I packed 
them in oil and refrigerated.  There is no need to worry about botulism as they 
never last more than 2 days...
