Purchase date is a reference for the ultimate taste!  It is much like a fine 
wine, perhaps it goes over the top and descends a bit on taste, but if 
refrigerated after opening I wouldn't fear a health problem.  We often have 
"past date" sauces and enjoy them w/no ill consequences!!!!
