[CH] Indoor maturing

In these cold parts of the world we often have to resort to buying 
green pods if we want fresh chiles.

They sometimes ripen after laying around for a week, but they might 
just as well dry or rot.

Does anyone know of optimum methods of post-picking ripening? Room 
temp or fridge? Plastic bag or free air?  Etc...

Any inputs appreciated,
