Here's one from the Hatch Chile festival:

HotCold Poppers:

Slit open chile.
(Remove seeds & veins if you're a wuss.)
(Stick a mint leaf in if you want to.)
Fill with Haagen Das vanilla ice cream.
Freeze solid.
Melt the best dark chocolate* you can find.
Immerse the frozen ice-cream-stuffed chile in the chocolate.
Let the chocolate harden at room temperature.
Roll in chile powder.
Immediately refreeze.
Eat whenever you're ready.
