I agree, let them experiment and learn.  Plus they get some serious bragging 
rights.

I didn't get the C-H urge until age 14 - 15 or so.  When I was a kid we 
would almost always have a bottle of Tabasco that had been in the cabinet so 
long that it would be brown.  Whenever we would get a fresh red one, it 
looked strange until it got old enough to look more like what we were used 
to.

These days my folks have a few different sauces around, and I try to keep 
them fresh, and keep presenting them with new types.  This can have funny 
consequences like the time Mom grabbed a bottle of Euphoria red hab sauce, 
thinking that it had a squirt top - it didn't, and she wound up with the 
hottest darn Bloody Mary I've ever tasted.
