[CH] coyote's mushrooms

Hi all chile-heads,
Well it has been a bit since I've added anything to the list.. too
busy.. what with working, college classes and of course dealing with 3
teens...
anyhow Friday night is my night for my self.. my lady's at school, the
kids are at HS football game so I have time to cook for myself..
so I fire up my BBQ...........
Throw some celtic music on the CD player (a new CD by Tannas and some
favs from Tempest)
grab a good ale (McEwans)

Main course is a rib-eye medium rare blackened with a chipotle rub,
potatoes with garlic butter and an improve side dish..

Coyote's Hab a mushroom!

Ingredients:

1 Red Savina, diced
 1 to 2  Tbsp butter
 1/2 sweet onion, diced
 23 mushrooms, sliced
 garlic powder , to taste
 olive oil
 Tarragon to taste

In a large skillet (cast iron is best) melt the butter and sauté the
minced Red Savina Habanero  for a minute or two. Next add the sliced
mushrooms and diced onion. Dust the mixture with garlic powder to taste.

Drizzle the mixture with a bit of olive oil. When the mushrooms are
cooked through sprinkle them with Tarragon and then serve.
I find this to be nice and warm.. not too hot and the Tarragon goes well

with the fruit characteristics of the habanero slightly mellowed by the
butter..tasty!
