If Anticuchos are marinated in the proper garlic, cumin, pepper, mirasols, 
anchos, red-wine vinegar, achiote oil and bacon, then skewered and 
Qued......yummmmm

When we were recently in Santiago, Chile we feasted on them at a Peruvian 
restaurant. My daughter just about lost it with the "mixed grill" we ordered 
in Mendoza, Argentina and no Pisco was in site to save her from intestines, 
heart, sweetbreads, kidneys, udders, etc.  They just threw the whole "item of 
viscera" on the grill and then plopped the platter in front of her.  No hot 
sauce in site to save us.
