One trick I've used is to dip a ladle into the salsa, and let the excess 
fluid pour into it, a little at a time, over the rim.  You can steal a lot 
of liquid this way.

Sometimes simmering longer actually releases more fluid from the 
ingredients.  You tend to lose the distinctive flavors and textures.
