[CH] Mango chutney/ Slight return/ Recipe/ Diatribe

Made a Mango Chutney the other day and thought I had better share it
with the list..

Ingredients 
Solids
12 green to semi green Mangoes ( big ones )peeled and chopped medium
1 Apple I used a red one peeled and chopped medium
2 Oranges peeled/seeded and chopped coarse
1 Sweet Potato - orange - peeled and chopped medium ( size does not
matter. ( I think I said that to a girl once and she just laughed..<g>
3 Onions Chopped coarse
5 cloves Garlic chopped fine
2 inches/50mm Ginger root peeled and chopped fine 
1 Cup Tamarind 
1 cup sultanas 
1 cup Currants
1 cup Raisins 
3 Orange Habanero Chiles stemmed and seeded 
(I have to give some of this away so thats why I sort of woozed here).
4 Cayenne stemmed and Sliced ( didn't wooze there)..
4 Aji's stemmed and sliced ( nor here)
Wet stuff
1/2 litre Thyme Vinegar
1/4 litre Cherry Vinegar 
1/4 litre White Vinegar
+ extra as needed
Sweet Stuff 
1lb/500g dark Brown sugar
1/2+ cup marmalade
Dry stuff
1 Tbs ground Ginger 
2 Tbs Brown Mustard seed 
3 Tbs yellow Mustard seed
1 Tbs Coriander seed
1 Tbs pepper corns (black)
Secret stuff
Ingrdient F - 1 teaspoon
Recipe 
Put wet stuff and sweet stuff in a big pot- stainless
Vinegars, sugar and marmalade..
bring to boil add onions, garlic, sweet potato, ginger root, slow boil
10 minutes add rest of solids and dry stuff slow boil for 30-40 minutes
adding more vinegar ( i used white as it was all i had left- Malt would
have probably been better)..
During last 5 minutes add Secret stuff ( Tony Flynns OJ Hab Powder/ I
have a small quantity left. Thanks Tony!!!!!!!!!!!!!!!!!!!

Bottle in sterilised jars..
Makes about 1 Gallon US or 4 Litres maybee a tad more..

#Tip sterise them in a Microwave and just pour boiling water on the
lids, let cool and fill..

This stuff should keep for yrs, my problem is friends coming over and
wanting a Jar..
as the old song goes .. " God Damm the Pusher Man"

The Vinegars I used came in a fancy holder and were from some company in
the USA/ purchased Locally..
The Cherry Vinegar tasted like it was made with 50% flavouring but it
boiled out.. 
I would have probably used Malt Vinegar but had none so went to the
pantry...
