[CH] My favorite Hot Wing Recipe

I love this recipe because it has a lot of heat, but the flavor of the
mango comes through, and, by varying the amount of sugar, it has been
enjoyed by even the wimpiest of palates!


Veronica’ s Mango-Bango Hot Wings

Ingredients:
* 6 oz. French's mustard
* 2 oz. Ketchup
* 1/2 cup white vinegar
* 2 cups water
* 1-2 cups of sugar ( I use 2 if there will be "children" present)
* 1  mango, peeled and cubed, or approx. 6 oz. Jar prepared mango with juice
* 4 to 6 oz. Crystal Louisiana Hot Sauce
* 1.5 –3 oz. crushed red pepper (or, name your poison!)
Cajun seasoning to taste

Hot Sauce Cooking Directions:

1. Combine water, vinegar, sugar, hot sauce, and red pepper flakes
2. Bring to boil
3. Stir in: mustard, ketchup, mango
4. Cover and simmer 3-4 hours <<<< very important

This takes some time to cook, but it is worth the wait!

 Directions for Cooking the Wings:
Dust the wings with Cajun seasoning before I broiling.  You can also
grill or fry the wings.  To broil the wings place on a broiling pan,
season and broil until a toasty brown (10 to 20 minutes).  Turn and
continue to broil until done.  When wings are cooked, pour the sauce
into a large, heat safe plastic bowl with a lid, toss in the wings,
close the lid and shake until the wings are well coated and ready to
serve.  Reserve sauce cane be refrigerated and re-used.
