[CH] Sri Lankan curries: elumas curry

Elumas curry (Mutton curry) - I usually make this with beef, and it's
delicious.

500g (1lb) Mutton
1 medium onion, chopped
2 green chillies, chopped
4-5 curry leaves
1" piece of rampe
1 piece lemon grass
3 cloves garlic
1/2 inch piece of ginger
1 ripe tomato
1 tbsp chilli powder
1 tsp Ceylon curry powder
1/2 tsp turmeric
1/2 tsp black pepper
1/2 tsp mustard seed
salt to taste
1 tbsp cooking oil
1 tbsp vinegar

Cut meat into 1" cubes. GRind the ginger and garlic into a paste. Mix
the chilli powder, curry powder, turmeric, pepper, salt and the
lemon grass and mix with meat. Cover and allow to marinate for 1-3
hours.
    Fry the onion, green chillies, curry leaves, rampe and the
ginger/garlic paste in the oil on a low heat. When the mixture is golden

brown ad the chopped tomato, mustard seeds and cover and simmer for 3
minutes. Add meat and vinegar and stir, Cover and simmer
over low heat until meat is tender (40 mins minimum). Serve with rice
and accompaniments.
