Hmmm, pasta--fusilli or other heavy pasta, cooked plain, put in the
refer.  Mix with a bag of salad, add some beans, use good salsa for
dressing.  Leave the salad out.  Mix with (rinsed)
pinto/black/canelli/rice beans.  Add some corn.  Use lot's of good
seasonings and salsa for dressing.

Bag of salad, can of clams, tuna, etc.  Use salsa for dressing.  Salt,
pepper, Calvins, Jim's, I make a rub that I use on a lot of stuff.  Use
pasta instead of salad.

Take a can opener with you.  And just pack the pasta or salad in a rush,
get the other stuff on the road.

Put thick chili, hot or cold, over both the above.

Chopsticks are good.  Plastic fork?
