Commercial companies use any one of several means.  Your choices
include:  vinegar, citric acid, ascorbic acid, potassium sorbate, sodium
sorbate, refrigeration, and nothing.

I use vinegar and tomato.  My pH is low enough that I need nothing else
even though I put 'store cool' on the label.
