   For my smoker, a small electric Brinkman, the water tray
HAS to have liquid in it.  If it runs dry, the heating element
(being directly beneath it) turns the tray into a heating element
in its own right.  At that point it is no longer indirect heat cooking,
and quickly bakes the food before it can take on any smoke
flavoring.  It does add moisture to the cooking environment,
so the food doesn't dry out during long cooking times.
