Well I had about half a dozen roma tomatoes, which begged to be used, so
I did this tonight!
6	Roma tomatoes, skinned seeded & chopped
1	baseball sized onion, chopped
2	jalapenos, 1 red 1 green, seeded chopped
1/2 green pepper, chopped
1/2	tin pizza sauce
6	cloves garlic, peeled & chopped
1	tsp oregano
about a dozen leaves of basil, chopped
salt & freshly ground pepper from my Turkish coffee grinder!

8	ozs of Italian flat noodles

Simmer the onion & garlic in olive oil until onion gives up and goes limp
and then throw in the tomatoes, peppers, pizza sauce(I just had this in
the freezer!) oregano, basil, and let this simmer while you cook the
noodles al a dente....do NOT overcook the pasta....drain pasta, place in
Italian pasta bowls, add sauce, and season to your taste....serve with a
fresh tossed salad, and garlic bread.....oh, I also served freshly
cooked spinach with this. Enjoy, Doug in BC
