Wait, there's something missing here ... where's all the agony?  My
Lithuanian parents

  YoYoYo!!!! Careful with the ethnic background thing!!
I call myself a Heinz  57 Varieties because of my heavy Slavic background,
Polish/Lithuanian/Russian&Jewish & then my Minor Ethnic backgrounds of
French/English/ Welsh/Scottish/Irish!!!!!!   I'm American through & but be
careful what you say about my ancestry!
  Actually had Ex-In-law Germans do the same thing/Think hand processing can
cause discomfort to eyes & sinuses. Can't comment on it because I've had a
Cuisnart food processor for 15 years and short of a recent heavy duty
blender acquisition consider it the most indispensable kitchen gadget I have
(although My new Excalibur dehydrator is going to get a H&LL of a workout
this fall---Seed Trades Anyone???---)

  Not trying to sound like an expert here but YOU MUST CONTROL SPREADING OF
HORSERADISH NOW!!!! If you knew how many sites I've been on that wanted to
know how to control an errant root you'd be amazed. Basically Horseradish is
a weed that will take over any area and expand into other areas around it. I
put 18" deep patio blocks around my horseradish bed & then tilled bed to 2'
deep. If you've grown for a few years we can skip depth/angle thing. If you
feel root is ready dig around root with pitchfork to loosen soil & pinch as
much roots from soil as you can. Put aside enough roots for replanting & use

  Only thing I can add is this, as third website says, vinegar slows heat.
First couple of times I prepared horseradish it seemed tame/found out I was
adding too much vinegar to start. Less Vinegar during processing/more
HEAT!!!
  Answering last question: Prepared horseradish this way will last over a
year if refrigerated. Never froze it because it's frozen in ground from late
Nov. to early April here in the Northeast & preserved it's fine the other
7-8 months.
