[CH] Garam Masala

Hello everyone my name is Rodney Livingston and I just subscribed to the
digest this week.I have only evolved into a chile-head over the last
year so I have a lot to learn.Looks like I found the right place .  I
have a recipe for Garam Masala that my tastebuds like I hope yours do
to.I definately will try the two I saw listed already. Home for me is
Burford Ontario Canada only about 80 miles from Toronto so I will
definately be attending the hoy&spicy food festival .  Mr Dewitt an
honour to be sharing cyber space with you and all my new friends a warm
salutation.


10 green cardamom pods
6tbsp coriander seeds
4tbsp cumin seeds
10 cloves
2 inch piece cinnamon stick
1tbsp black peppercorns
3 dried bay leaves
1tbsp ground mace


Gently warm a dry heavy-based pan before adding the spices

Bruise the cardamom pods and place them in the pan with everything but
the ground mace. Keep tossing the spices over a gentle heat until they
give off a rich aroma.

Remove the seeds from the cardamom pods and discard the husks. Break the
cinnamon stick into small pieces, add the ground mace and grind
everything into a fine powder.
