[CH] Chipotle---Purple

Hi all
Delurking to tap the expertise of this extraordinary group.  

In a moment of weakness, and in deference to my daughter heading off to
college (and her love of all things purple) I planted some purple jalapenos,
purple tomatillos and purple serranos which are now growing prolifically.
The plan was salsa.   What I am discovering is that the peppers sprout
purple, taste about the same and eventually turn red like any other Jal
while the tomatillos sprout green and evolve to purple as they ripen.  Thus
the timing on my purple tomatillo salsa is a challenge.

The question for Plan B is whether anyone has experience in Chipotl-izing
the purple pods?  Will flavor come out too "green" if I smoke them before
they ripen into red?  And of course any thoughts on what should go into an
adobo sauce?
