Risa,

They take quite a while to ripen.  I picked a couple green when I first
planted it, because I couldn't believe they weren't ripe yet.  Finally I had
the patience to let one ripen, and then I was very happy I did.

One thing, I find once they ripen (change colour) a bit, they ripen really
quickly off the plant.  They need to be eaten soon after picking.

Hmm - not sure if I've described this behaviour properly.   Once they have
started to ripen, they finish ripening quicker off the plant than on...
