[one woman said that chiles con queso was really good
so I asked what sort of cheese she used, thinking that I'd get
a clue about the 20 different white mexican cheeses that're
available, but she just said that she uses jack cheese... I guess
I'll just have to buy a selection of queso and find out myself]

Great story!  I thought I would mention that (I think) both Dianna Kennedy
and Rick Bayless have chile con queso recipes in their books.  This might
provide some insight as to the types of cheese used -- queso Chihuahua,
perhaps?  When my wife and I were living in New Mexico, we generally found
that our favorite chile con quesos were white in nature rather than yellow
(although I must admit a certain fondness for Velveeta pasteurized processed
cheese-flavored food).
