Hi Jeff...I store my home-smoked chipotles in the freezer just to make sure
they don't mold.  I don't dry them crisp because they are a bit easier to
chop etc if they retain a bit of moisture, sort of like a prune in
consistancy.

I just bought one of those vacuum, sucker-uppers to package food and think
that will make a nice way to store smoked...or even fresh...chiles in the
freezer this winter.
