[CH] Chile and fishes

My favorite recipe for a marinade for fish, with chiles is as follows :

4 tbsp	quality soy sauce
3 tbsp	quality fish sauce
2 tsp		sugar
2 tbsp	lime juice
~1/4 C	fresh cilantro, minced
4-5 cloves	fresh garlic, minced
1-2 tbsp	fresh habanero, minced
1-2 tbsp	fresh thai chile, minced

Mix all ingredients together and allow to steep for ~4 hrs or overnight.
Pour into a Ziploc plastic bag and add fish.  Squeeze out all the air and
seal.  Allow to marinate for at least 2 hrs.

This is particularly good with fresh tuna steaks that you then grill over
hickory.  Gives me a culinary boner.  <vbg>
